And while we're all familiar with the top few selections, from our pizza and sandwich consumption, it may surprise you to know there are around 400 different Italian cheeses to choose from. And when it comes to quality and good tasting cheese, the Italians have a great passion for delivering on it, and they do.

From Sicily to Tuscany the Italians make some of the best parmigiano and provolone in the world. Their Mozzarella is a household name. And again, these don't even scratch the surface of the number of cheeses they actually make. They use goat's milk, sheep's milk, buffalo milk, and cow in their processes. All their cheeses have great texture and fragrance, and are good for both shredding and cooking.

The Italians take a lot of pride in their cheese quality. And if you go shopping for a quality Italian cheese, just look for the classifications on the label. These are the 'PDO', which means Protected Designation of Origin. And the other is IGT, which means the Protected Geographic Indication. Making Wine From Home is Easier Than You Think... Just Follow These Six Steps

Making wine is truly an art form that will change the way you view your world and the community of people in it. You and your hard work will be integrated in every bottle of wine you manufacture. Making wine from home is a fun hobby, not to mention good wines can be made for just pennies on the dollar. Many people think making wine is hard, however it is easier than you think. Wine making is an age old craft that people all over the globe still do today. Making wine from home can be done in six steps:

Step 1 - Sourcing Grapes: Making wine is easy and you can even make wine from frozen grape juice found at your local supermarket. If you are inclined, you can buy grape juice from companies selling various varietals such as merlot, cabernet sauvignon and pinot noir to name a select few.

Step 2 - Primary Fermentation: Pour grape juice into a wine making container, adding campden tablets, cover the container with a towel and let it sit overnight. Sulfur gas is created by the campden tablets that kills bacteria and eliminates any naturally occurring yeasts. Fermentation begins after adding your yeast. Allow the juice to ferment five to seven days. Fermentation should start quickly, typically within 24 to 48 hours. The juice should start foaming as the yeast converts sugars into alcohol and carbon dioxide gas.

Step 3 - Secondary Fermentation: Once initial fermentation is complete (in five to seven days), siphon the wine into another container being careful to leave resulting sediments behind. Place an airlock on the container to keep your wine from oxidizing. Your wine will ferment an additional five to seven weeks until it is completely clear. Initially, fermentation will be active and you'll see consistent bubbling in the airlock as evidence. Be careful not to open the container prematurely since contamination is a real threat to your wine. Your patience will pay off.

Step 4 - Racking the Wine: Sediments, also know as lees, are created during the fermentation process and settle to the bottom of the container. The lees are primarily dead yeast cells that need to be removed before they adversely affect your wine's flavor. This sediment removal process is called racking. It is possible to over rack your wine so be careful. Over racking can slow down or even halt fermentation while unwanted oxidation and organisms can be introduced into your wine.

Step 5 - Bottling the Wine: Before readying your wine for bottling, one last racking is necessary to remove all trace sediments from the wine. Adding campden tablets will ensure any existing yeast and bacteria are eliminated. Now you're ready for the last step, bottling your wine. Keep in mind most traditional wine maker's prefer bottling their wine in traditional wine bottles and sealing them with corks, however one should note there are other alternatives out there.

Step 6 - Drinking Your Wine: Now comes the best part, drinking and enjoying the fruits of your hard work. You may want to maintain a wine making journal to document what you did to each batch and the resulting wine attributes to make improvements or replicate what you did in your next batch.

Making wine from home can be a fun and rewarding hobby. Like any new hobby, there is a learning curve that one needs to come up. But with a bit of patience and a willingness for trial and error you'll be developing just the taste you like. Nothing is quite like the feeling you get when opening a bottle of your wine and you know you're the one who made. There are over 400 different types of Italian cheeses. The Italian cheeses will have a specific designation that is listed under the protected designation of origin. This states that the cheeses form specific areas were all made in a specific way that is traditional to that region. If the cheese is not made in the correct way then it cannot carry the designation of origin.

One of the most famous Italian chesses is Asiago. The texture of this cheese will differ depending on its age and very fresh Asiago is smooth and aged Asiago is crumbly. Asiago can only be made in the town of Asiago which is in the Veneto region of Italy. This cheese is frequently used in sauces, pasta, soups, salads or sliced on sandwiches and panini.

A mild and delicate soft cheese is Bel Paese. This is a semi-soft cheese that comes from the area just outside of Milan. However producers have started to make Bel Paese in the US as well as other areas of Italy. Bel Paese has a short aging period of 6 to 8 weeks and is made entirely from cow's milk. The name Bel Paese comes from a book by Stroppani which is called Beautiful Country.

A fun bite sized cheese is Bocconcino. This cheese comes in small balls that are made of unripened cheese. This unripened cheese does not have a rind and is typically made of buffalo milk. Today some bocconcino is also made of cow's milk. In order to keep the cheeses texture, which is spongy, bocconcino is packaged in water or whey.

Burrata is a type of cheese made form cream and mozzarella. The outside of the cheese is only made of mozzarella and the inside is softer and is made of cream and mozzarella. Burrata was first produced in the early'00s in a small spot of the Apulia region. It has since become and artisanal cheese. It is best serves when sliced open so the softer center can flow out. It should be eaten in 24 hours otherwise the flavors will diminish.

A traditional Sicilian cheese made of sheep and cow milk is caciocavallo. This cheese comes with its own EU designation of origin as the cows and sheep must be feed particular food and the cheese must be made in a specific way. The flavor of caciocavallo is very similar to provolone and the cheese is generally shaped like a tear drop.

A very old cheese that was a favorite of Michelangelo and Pope Clement XIV is casciotta d'Urbino. There are many different types of casciotta and casciotta d'Urbino is made in central Italy of cow and sheep milk. This is a rinded cheese that has a yellow or white interior and a very mild flavor.

A cheese that is typically used in fondues of veloutees is castelmagno. This cheese is half fat and classified as semi hard. You use whole cow's milk and the cow must eat fresh hay from a pasture. Castelmagno goes particularly well when paired with honey or fortified wines.
